We also pay special attention to the ingredients we use.

The tuna and sea urchin are delivered directly from Ishiji, a wholesaler in Toyosu.In addition, we purchase carefully selected seafood from fishing ports all over the country according to the season.The ingredients, which have been carefully and painstakingly aged, are paired with mellow red vinegar rice and a special soy sauce made from soy sauce from Shodoshima, Kagawa prefecture, and bonito.
